Sweet & Sour Meatballs

These sweet and sour meatballs are a delicious and family-friendly meal everyone will enjoy. With the perfect mix of tangy, savoury, and sweet flavours, every bite is full of flavour. Ready in just 35 minutes, they’re a quick and easy option for busy weeknights.

Ingredients:
• 1 tbsp Lee Kum Kee Premium Soy Sauce
• ½ cup Mrs Rogers Coating Mix Italian Garlic Crumb or Mrs Rogers Breadcrumbs Panko 600g beef mince
• 1 onion, diced
• 1 clove garlic, crushed
• 1 egg, lightly whisked
• 1 red and/or green capsicum, diced
• 3/4 cup pineapple juice
• ¼ cup white vinegar
• 1 tbsp brown sugar

Method:
1) In a mixing bowl, combine the mince, onion, garlic, breadcrumbs, soy sauce and egg. Season with a little salt and pepper.
2) With oiled hands, shape the mixture into meatballs and place on a tray or board.
3) Heat some oil in a large frying pan or wok over medium heat. Fry the meatballs until well coloured and cooked through. Remove from the pan and set aside.
4) Whisk the sauce ingredients together in a small bowl and then add to the frying pan that the meatballs cooked in. Stir over a medium heat, adding a small amount of water if necessary. Add meatballs to the sauce and toss to coat. Simmer for a few minutes and serve.

Tip:
Serve meatballs on noodles or rice with your favourite steamed greens alongside.
