Serves: 4
Prep Time: 35 Minutes (includes marinating time)
Cook Time: 25 Minutes
Ingredients:
• 2 cups Edmonds Standard Grade Flour
• 1 tablespoon black pepper
• 4 tablespoons sweet paprika
• 1 teaspoon garlic powder
• 250ml buttermilk
• 1 Otaika Valley Free Range Egg
• 1kg chicken pieces
• 1 teaspoon Vegeta Gourmet Stock & Seasoning powder
• 1L The Good Oil Rapeseed oil (for frying)
• 1 tsp salt
Method:
1. In a large bowl whisk together buttermilk & egg.
2. Place chicken pieces in bowl mix with buttermilk & egg mixture. Cover & place in fridge for 30 minutes.
3. While the chicken is marinating, in a second large bowl add Vegeta, herbs & spices with flour. Mix all ingredients well.
4. Take chicken out from fridge & remove chicken from bowl, allowing any excess liquid to drain. Place in flour mixture & press firmly to coat all sides with flour.
5. In a large pot/pan for deep frying, heat oil to 175C. When oil reaches temperature, reduce heat to low-medium. Carefully place chicken in the hot oil. Continue with other pieces of chicken until you fill the pan, being careful not to overcrowd it. It's best to fry 3 to 4 pieces at a time. Cook for 12 minutes or until the crust is golden brown & chicken is cooked through. Remove chicken & place on plate with paper towel.
