Delmaine Chickpea Salad with Feta Dressing

Serves: 4-6 people
Ingredients:
• 1 small red onion, sliced
• 400g Delmaine Chickpeas, drained and rinsed
• 250g cherry tomatoes
• 6 radishes, finely sliced
• Half a cucumber, chopped
• 1 large bunch flat leaf parsley, roughly chopped
• 1 small bunch mint, roughly chopped
• 12 Delmaine Pitted Kalamata Olives
Dressing:
• 150g Delmaine Marinated Feta
• 2 tbsp lemon juice
• 2 tbsp olive oil
• 1 tbsp Delmaine Balsamic Vinegar
• 2 tbsp hot water
Method:
1. In a small food processor, blend the feta with lemon juice and vinegar, then slowly whisk in the olive oil and finally enough of the hot water to make a creamy dressing. Set aside.
2. Place the sliced red onion in a small bowl and cover with water. Sit for 10 minutes, then drain thoroughly.
3. In a serving bowl combine the onion, chickpeas, tomatoes, radishes, cucumber, parsley and mint.
4. Toss salad, garnish with Kalamata olives and drizzle over dressing.
