Tuisiana BBQ Pork Spare Ribs

Ingredients:
• 1kg Woolworths NZ Free Farmed Pork Spare Ribs
• 750g The Greater Good Matamata Fries Beer Battered Steak Cut
• 2 x 330ml bottles Tui Pale Ale
• 1 tsp crushed celery seeds
• 1 tsp onion powder
• 2 tsp garlic powder
• 1 tsp paprika
• ½ tsp cayenne pepper
• 1 tsp salt
• ½ tsp cracked black pepper
• 1 cup Tuisiana BBQ Sauce
Method:
1. Mix all dry ingredients together and rub into both sides of the ribs. Wrap in tin foil and refrigerate for half an hour.
2. Preheat oven to 160°C.
3. Fill a lidded roasting pan with the pale ale and place a wire rack in the centre of the pan. Place the ribs on the rack and cook for 1 and a half hours until meat is tender. Retain foil.
4. Increase oven temperature to 180°C and remove lid of roasting pan. Cook a further 15 to 20 minutes. Beer should have evaporated and ribs should start to go crusty.
5. Remove ribs from pan and return to foil, bone side up. Place ribs in foil back into pan and generously coat bone up side in Tuisiana sauce. Bake for 10 minutes and then flip ribs over and coat meat side. Return to oven for 5 minutes, swap and coat the bone side again, bake for 5 minutes and then a coat and bake of the meat side for a final 5 minutes. Baste as often as you want and repeat the coating process for thicker ribs.
6. Serve with coleslaw, The Greater Good Matamata Fries and extra Tuisiana for dipping.
