
Jordans Low Sugar Granola Blueberry & Coconut Muffins

Ingredients:
• 125g butter, melted (or you can use melted coconut oil)
• 2 tablespoons milk of your choice
• 1 teaspoon vanilla extract
• 2 large eggs
• 1 ripe banana
• 100g Jordans Low Sugar Granola Blueberry and Coconut*
• 100g self-raising flour
• 1 teaspoon cinnamon
• 75g raw sugar
Method:
1. Preheat oven to 108 degrees Celsius.
2. Line a 12-hole muffin tin with muffin cases.
3. In a large bowl whisk the eggs.
4. Add banana and mash well.
5. Add melted butter (or coconut oil), milk and vanilla extract. Whisk with a fork to combine.
6. In another bowl combine all the dry ingredients and mix well.
7. Stir the wet ingredients into the dry ingredients with a spoon until just combined, being careful not to over mix.
8. Spoon into the prepared muffin tin and back for 25-30 minutes, until a skewer inserted into the middle comes out clean and the tops have turned golden brown.
9. Cool on a wire rack.
10. Store cooled muffins in an airtight container in the fridge or freezer.
