M&M’s Gingerbread Cookie Bites

Without all the fuss of gingerbread cookie cutouts, these bite-size cookies are soft, chewy and nicely spiced.

Ingredients
• 1 1/3 cups all-purpose flour
• 1 tsp baking soda
• 1 tsp each ground ginger and cinnamon
• 1/4 tsp ground cloves
• 1/4 tsp baking powder
• 1/4 tsp salt
• 1/2 cup butter
• 1/3 cup brown sugar
• 1/4 cup granulated sugar
• 1 egg
• 3 tbsp molasses
• 1 tsp vanilla extract

1/2 cup M&M’S
Method
1. In bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, baking powder and salt; set aside.
2. Using electric mixer, beat together butter, brown sugar and granulated sugar until light and fluffy, scraping down sides of bowl as needed. Beat in egg; stir in molasses and vanilla. Stir in flour mixture just until blended.
3. Line 8-inch square pan with enough baking paper to overhang edges. Press dough evenly into pan; cover and freeze for 20 minutes.
4. Preheat oven to 190°c. Lift dough out of pan and transfer to cutting board; remove baking paper. Cut into 1/2-inchsquares. Arrange bites on baking paper, about 2 inches apart.
5. Top each piece with M&M’S. Bake for 8 to 10 minutes or until set around edges but still slightly soft in center. Let cool in pan slightly. Transfer directly to rack; let cool completely
