
Beef, Bean and Corn Nachos Tray Bake
A crowd-pleasing nacho bake made with layers of crunchy corn chips, seasoned beef mince, black beans, and tomatoes, all topped with melted cheese. Finished in the oven until golden and bubbling, then served fresh with jalapeños, creamy avocado, and a dollop of sour cream for the perfect mix of flavour and texture.

• 1 Maggi Mexican Nacho Seasoning 41g
• 170 g Mexicano Corn Chips Tasty Cheese or Salsa
• 1 tbsp Golden Sun Jalapenos
• 500 g Beef mince
• 1 Onion, finely chopped
• 1 400g can of black beans, drained and rinsed
• 1 400g can of chopped tomatoes
• 1 ½ Cup Grated cheese, cheddar or tasty
• 1 Avocado, diced or sliced
• ½ Cup Sour cream
• Red onion, finely chopped - ¼
Instructions:
1. Heat a large frying pan over medium-high heat. Add the beef mince and onion and cook for 5 minutes, breaking up the mince, until browned.
2. Stir in the black beans, chopped tomatoes & the nachos meal base. Reduce the heat and simmer for 5-7 minutes until thickened.
3. Preheat the oven to 180°C. Spread the corn chips over a large shallow oven tray and sprinkle with half of the cheese.
4. Spoon over the beef mixture and scatter remaining cheese on top.
5. Bake for 15 minutes until the cheese is melted and bubbling.
6. Remove from the oven and top with chopped jalapeños, sour cream & avocado.
7. Serve straight from the tray.
