Rich & Creamy Butter Chicken

The ultimate butter chicken recipe made with Patak’s Butter Chicken Paste to deliver the perfect balance of richness and warmth.

Ingredients:
• 1 tbsp Alfa One Rice Bran Oil
• 1 onion, chopped
• 140g Patak’s Butter Chicken Paste
• 150ml water
• 500g boneless chicken thigh, (diced into big chunks)
• 200g Leggo's Gourmet Pasta Sauce Passata or Leggo's Gourmet Pasta Sauce Passata With Garlic
• 2 cups of Fortune Aromatic Basmati Rice
• 150ml double cream
• 50g butter
• 1 tbsp sugar

Method:
1. Heat the oil in a pan and add the chopped onion. Cook on a medium heat until soft.
2. Add the Patak’s Butter Chicken Paste and cook for 1-2 mins. Add 100ml of water and cook on a medium heat until all the water has evaporated.
3. Add the diced chicken thighs and cook on a high heat until the chicken is seared.
4. Add the tomato passata and 50ml water, simmer uncovered until the chicken is cooked. Meanwhile, cook 2 cups of rice in 4 cups of boiling water until tender.
5. Add the double cream, butter, salt, and sugar to taste. Cook for 4 mins.
6. Serve hot with rice.
