Sweet Chilli Beef Stir-fry

Tender beef strips stir-fried with crisp vegetables in a sweet and tangy Thai sweet chilli sauce. A quick, flavourful dish with the perfect balance of heat and sweetness.

Ingredients:
250g steak thinly sliced (beef rump or sirloin)
2 tbsp Exotic Food Sweet Chilli Sauce
1 tbsp Kikkoman Soy Sauce
1 clove of garlic crushed
1½ cm fresh ginger grated
¾ cup Sunrice Jasmine Rice
1 tbsp vegetable oil
½ Medium Onion, sliced
1 small capsicum, sliced
1 tbsp oyster sauce

Preparation:
• Place the beef in a bowl, add half of each of sweet chilli sauce, soy sauce, garlic and ginger.
• Mix well to coat the beef evenly. Allow it to marinate for at least 15-20 minutes.
• Cook the rice according to packet instructions.
• Place a wok or large frying pan over high heat. Add half of the oil and let it heat until it starts to shimmer.
• Add the marinated beef to the wok/pan and stir-fry for 2-3 minutes or until the beef is browned. Remove the beef from the wok and set aside.
• Add the remaining oil to the wok. Add the vegetables.
• Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
• Add the remaining garlic and ginger and then add the beef and remaining sauces plus the oyster sauce. Heat until piping hot.
• Serve the sweet chilli beef with rice.

Tip: Add extra vegetables, like courgetti or carrot, to make the stir-fry more filling and nutritious. For an extra flavour kick, try garnishing with cashews and fresh coriander
