Oaxaca Cheese Pot Mission Chili and Lime Tortilla Triangles

Ingredients:

Cheese dip:

• 2 tsp olive oil
• 1 small-medium onion, chopped
• 2 cloves garlic, finely chopped
• 80g Hellers Diced Chorizo, sausage casing removed then roughly chopped
• 1 cup grated Manchego cheese
• 2 cups grated ‘4 Cheese Melt’ cheese or grated mozzarella
• 2 spring onions, finely sliced

Instructions:

1. Prepare cheese dip; heat the oil in a 20cm heavy based cast iron frying-pan over medium-high heat and sauté onion for 2-3 minutes or until translucent. Add garlic and chorizo and cook for a further 2-3 minutes or until the chorizo is hot and soft.
2. Remove pan from heat for a few minutes to cool slightly, then add the grated cheeses and stir well. Ensure the cheeses are well combined and the onion and garlic is mixed in well with the cheese.
3. Place frying pan in a preheated oven of 200°C and cook for approximately 15-20 minutes or until the cheese is completely melted and bubbling.
4. To serve; place the-cast iron pan on a heat mat and arrange a few Mission Taco Tortilla Triangles into the cheese pan and sprinkle with spring onions. Serve remaining Mission Taco Tortilla Triangles in a bowl and serve with the cheese dip.
